Healthy Sweet Potato Pancakes

My first attempt at homemade sweet potato, nappa cabbage, & onion pancakes pan fried in coconut oil. These are a delicious & healthy alternative to potato pancakes 🙂

Give it a try!

Ingredients:
1 medium sweet potato
2 cups nappa cabbage
1 small onion
1/4 cup green onions
2 eggs
sea salt
pepper
cayenne
coconut oil (for frying)

Directions:
1. Shred all your ingredients (sweet potato, nappa, onions) into a large mixing bowl.
2. Break in 2 eggs and add seasonings. Mix.
3. Heat your pan on medium heat with coconut oil.
4. Scoop your pancake mixture onto the pan and fry until golden brown.
5. Enjoy 😀
